That's not a sensor, it's a crank vent heater. The pressure drop from positive pressure in the crank vent tube to negative pressure in the intake hose from filter to turbo can cause freezing of water vapor (like the low pressure side of the A/C system) and those ice crystals can erode your compresso...

If cold starts were hard and it lacked a little power, then it sounds like you had the injection pump 180° out (could be internal to the pump). With it 180° out, it will start and run, but be smokey and clattery all the time.

What aluminum bolts are you talking about?? I've never seen an aluminum bolt on a VW anywhere, definitely not on any stock water pumps. Thanks man. Yeah, it's custom. I did a 3D cad model first, flattened the design, printed on card stock,traced and cut from steel, bent the parts where they needed bends, welded it all together, ground the welds. It took a silly amount of time. I've been thinking I'd make eyebrows out of either steel...

I'm not sure if all the seals in the Bosch kit are viton or even why you are wanting them to be, but the Bosch kit is top quality and every seal in it is rated for use with all of the diesel fuel formulations including biodiesel and they all have been since the mid-90s.
